Sustainability is at the core of everything that happens at The Open Kitchen. We are huge advocates of reducing food waste and consider this topic to be of the utmost importance when developing our menus for you. Whether this is through carefully considered portion sizing, rigorous recycling + composting, or our attention to detail of ingredient usage.
 

What steps do we take to achieve a sustainable kitchen?

  • Working Closely with Suppliers and Producers: We collaborate closely with suppliers, producers, and our clients to ensure waste is kept to an absolute minimum, utilising the best seasonal ingredients. We focus on suppliers who uphold the same standards as us in protecting the planet's limited resources and curating their produce carefully.

  • Whole Ingredient Utilisation: We believe in using the whole ingredient from nose-to-tail, root-to-tip, fin-to-tail, in every part of the dish. Where un-suited to do so, we preserve ingredients for future events, ensuring nothing goes to waste.

  • Seasonal Foraging: We follow the seasons and responsibly forage for ingredients on our doorstep to provide dishes packed full of flavour while minimising our carbon footprint. Ensuring not to snap up the first signs of wild produce but allow it to establish for re-growth.

  • Comprehensive Food Waste Management: We're committed to reducing food waste at every stage. Each item of food waste is taken back with us after the event to be composted in our special dehydration system and fed back into the vegetable garden. This compost becomes a rich, nutrient-dense mixture to nourish the soils for future growth of our ingredients.

  • Responsible Oil Disposal: All our cooking fats and oils are sent to a local company to be refined back into cooking oil, minimising environmental impact.

  • Eco-Friendly Packaging: Our Finish At Home dishes are all packaged in compostable or recyclable materials, including our postage options, using Woolcool and their environmentally friendly freezer packs.

  • Sustainable Work Wear: We are currently in discussions with companies to provide us with recycled plastic/organic cotton-based workwear for our next round of uniform, further aligning with our commitment to sustainability.
