Uova al Purgatorio; translating to 'Eggs in Purgatory', this is a delicious dish perfect for anything from brunch to dinner. Slow roasted tomato + romano pepper sauce, Havensfield eggs, grated parmesan, lemon zest + pangrattato, all ready to bake in the oven or cook on the stove top.
 
Feeds two small appetites or one big one. Great with our freshly baked foccacia. You can also spice it up with the addition of Nduja (spicy calebrian sausage).
